While celebrating my 40th birthday in Pagosa Springs, Colorado, we stumbled upon this bakery and coffee house with a gluten-free menu. We arrived around 9:00 am for breakfast and it was surprisingly packed for a Wednesday. We had to wait about five – ten minutes for a table. Not too bad. We had time to look over the menu and decide what to have. The gluten-free items are marked on their menu along with the price of having it gluten-free. I decided on the Short Stack – two gluten-free pancakes and added a side of ham.
The pancakes were fluffy and huge! It was like ordering regular pancakes- full size. And they tasted amazing too. No gritty texture. No off flavor. Simply tasted like a yummy pancake dipped in maple syrup. The plate of two gluten-free pancakes ($5.99) and side of ham ($2.29) was around $8.28, a bit on the expensive side for breakfast, about $2.00 more than the non-gluten-free version. I was full all morning and didn’t eat lunch until mid-afternoon. I also had a Vanilla Latte with soy milk and it was very delicious.
Two Chicks and a Hippie is owned by a mother and son team, Betsy and Roy Burnett and Lou Jean Espinosa. You will see them at the coffee house and can learn more about them on their website. My only complaint about Two Chicks and a Hippie is the service was a little slow. We sat at a dirty table with nothing to drink for about ten minutes. The lattes took some time to arrive, but the food did come out in a timely manner.
Would I go back? Yes. There are not that many places that offer a gluten-free breakfast and even with the limited gluten-free items, it’s nice to have pancakes out of the house. So, if you are ever in Pagosa Springs enjoying the hot springs, stop by Two Chicks and a Hippie for a delicious gluten-free breakfast and coffee.
