Looking for a refreshing beverage to cool down these hot summer days? This Raspberry-Lime Rickey Slushies will do the trick.

You how you google one thing and that leads to another and to another and before you know it, you completely forgot what you were looking for in the first place? Well, that’s how I found this yummy drink from Cooking Light. They screamed summer and I had to make! They are deliciously tart with a dash of sweet and oh so refreshing.

Raspberry Lime Slushies with Gin

Raspberry-Lime Rickey Slushies
Serves: 4
  • 12 ounces frozen raspberries
  • 1 ½ cups sparkling water
  • ¼ cup lime juice
  • 6 tablespoons sugar
  • 2 ½ cups ice cubes
  • ¾ cup gin (I used Tangueray London Dry Gin)
  • Lime wedges (optional)
  1. In a blender, combine raspberries, sparkling water, lime juice, sugar, ice and gin. Blend until smooth.
  2. Evenly divide the drinks into four glasses and garnish with a lime wedge (optional).
