Quinoa Pizza Bites

Quinoa Pizza Bites are a terrific snack and a great kid’s lunch. Super easy to make and freezer friendly. These yummy little bites are made with quinoa, pepperoni, mozzarella cheese and a dash of spices. Lately, I’ve been taking them out of the freezer, defrosting and heating in the microwave and then dipping in my favorite gluten-free pizza sauce for an easy and quick snack. I sometimes forget to eat if I get busy. These are perfect for when I finally remember I’m super hungry and need something now.

Ingredients
  • 2 cups cooked quinoa
  • 1 cup mozzarella cheese
  • 1 cup pepperoni, quartered
  • 1 teaspoon garlic powder
  • 3 teaspoons italian seasonings
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 eggs
  • pizza sauce (for dipping)
Instructions
  1. Preheat your oven to 350 degrees F and lightly grease a mini muffin tin with cooking spray, set aside.
  2. In a large bowl, mix together the cooled quinoa, cheese, pepperoni, garlic powder, italian seasonings, salt and pepper.
  3. Add eggs and mix until well combined.
  4. Using a tablespoon, scoop 1 spoonful of mixture into each mini muffin and firmly pack the mixture into the tin.
  5. Bake for 15 minutes, or until firm and lightly golden around the edges.

  1. I can do these without eggs but with flax eggs can I?
    These are just lovely. I love portion control, taste, and portability.
    Versatile with my raw salads ( I have a lot!) and I will not eat rubbish when I am out, sugar, additives etc. I have a little roti,or something so I gave something for my day.
    It is good to have things we will both eat, how ever did a gf, vegan, yeast free get to be with a carnivore?
    Oh he loves anything pizza that one, so if it is eggs only, he will have these with joy and some will be on the table for the Xmas help yourself (I am on strike after the dinner!) and for our Hogmanay too.

    1. Airyfairycelt – I haven’t tried it with an egg substitute, but as long as the flax eggs will bind the mixture together. I did find something similar, try using 2 Tbsp. flaxseed meal + 4 Tbsp. water – allow 5 minutes to thicken. Hope this helps! Enjoy you holidays 🙂
