Quinoa Chicken Soup

Quinoa Chicken Soup is simply fresh tasting with the crunchy vegetables, rotisserie chicken, healthy quinoa and lightly seasoned with salt and pepper. A wonderful lunch for these cold winter days.

I love soups for lunch, but I recently decided to get braces. Yes, 40 with braces – again! I was lucky enough to have them as a kid, four and half years of fun. Do you hear the sarcasm? What was I thinking getting them again? This time should only be for six to nine months and I’m really hoping for the six month timeframe. I’ve had them for about a month now and WOW! Everything gets stuck in them. Eating soup is still a little challenging. I literally feel like I’m going to slowly drool the soup onto myself. It makes me laugh. The end goal will be worth it. No pain no gain, right? It’s funny how don’t remember any of this from the first time. To awful to remember I block it out? I do remember the tightening and oh- when they came off! Best day ever! I’m sure in a few more weeks I’ll be more used to them and not feel so awkward… or I’ll be wearing a bib while I eat. They make those for adults, right?

Quinoa Chicken Soup

Quinoa Chicken Soup

Ingredients
  • 2 tablespoons olive oil
  • 1 small zucchini, chopped
  • 1 carrot, chopped
  • ½ small red pepper, chopped
  • 1 small onion, chopped
  • 1 teaspoon garlic, minced
  • salt and pepper
  • ¼ cup uncooked quinoa
  • 1 pound rotisserie chicken, chopped (bite size)
  • 1 - 32 ounce container gluten-free chicken broth
  • 1 cup frozen peas
  • ¼ cup flat-leaf parsley, finely chopped
  • 2 teaspoons lemon peel, grated
Instructions
  1. In a dutch oven or large pot, heat the olive oil over medium heat.
  2. Add the zucchini, carrots, bell pepper, onion and garlic; season with salt and pepper.
  3. Cook, stirring occasionally, until the vegetables are tender, 7-8 minutes.
  4. Add quinoa, chicken and chicken broth to the pot.
  5. Bring to a boil.
  6. Add the peas and continue to cook over medium heat for 10 minutes or until quinoa is tender.
  7. Turn off heat, stir in parsley and lemon peel.
  8. Serve immediately.
