I’m going to warn you now… this won’t be the last donut post I make. These were soooo yummy and moist. I can eat about six in thirty seconds. Not good for the diet, but good for the “oh, how I’ve missed donuts!” My favorite Dunkin’ Donuts donut is the Vanilla Kreme Filled Powered — now to figure out how to make them GF.  If I do figure it out, I’m definitely going to have to bump up my workouts.

These Gluten-Free Donut Holes are super easy to make and even easier to eat. Even the SO thinks they are delish! I used a mini muffin tin, but I’m sure this recipe will work if you have a donut hole pan. I have limited space and using something I already have, just works better for now.You can make them with or without the topping. I have to confess, I ate a few while I was waiting for the topping to set and I could have gone either way.

Gluten-Free Donut Holes

Ingredients
  • 1 cup gluten-free oat flour
  • ¼ cup almond flour
  • ¾ teaspoon xanthan gum
  • ½ cup brown sugar, packed
  • 1 ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ cup butter, melted
  • 1 egg
  • 2 teaspoon vanilla extract
  • ½ cup milk
  • Honey Cream Cheese Topping
  • 1 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • 2 tablespoons heavy cream
  • ½ teaspoon vanilla extract
  • 1 tablespoons honey
Instructions
  1. Preheat oven to 350°F and grease a 24 mini muffin pan, set aside.
  2. In a large bowl, add flours, xanthan gum, brown sugar, baking powder, cinnamon and nutmeg, whisk together.
  3. In a small bowl, whisk butter, egg, vanilla and milk together.
  4. Pour wet ingredients into dry ingredients and whisk until well combined.
  5. Spoon batter into tin, filling almost full.
  6. Bake 8-9 minutes or until a toothpick inserted into doughnut comes out clean.
  7. Remove from oven and allow to cool for 5 minutes in tin.
  8. Remove from tin and cool completely.
  9. Once completely cool, dip tops into cream cheese topping.
  10. Honey Cream Cheese Glaze
  11. In a small bowl, mix all ingredients together until well combined and smooth.
  12. Let the mixture rest for about 10 minutes.
