Gluten-Free Brown Rice & Black Bean Guacamole Salad Bowl is a tasty lunch or light dinner made with brown rice, black beans, diced cucumbers, red onions, red pepper and corn topped with romaine lettuce, cheese and a dollop of your favorite guacamole. The unique salad dressing is layered under the fresh veggies with a mix of guacamole and sour cream or Greek yogurt. Easy to make ahead and assemble when ready.

Ingredients
  • ½ cup fresh guacamole
  • ½ sour cream light sour cream or plain Greek yogurt
  • 1 cup corn kernels, fresh or frozen thawed
  • ½-1 cup diced cucumber
  • ½-1 cup diced red pepper
  • ½ cup chopped black or kalamata olives (optional)
  • ½ cup diced red onion
  • 2 cups cooked brown rice
  • 2 cups black beans, drained and rinsed
  • 2-3 cups romaine lettuce, chopped
  • 1 cup Mexican blend cheese
  • 12 cherry tomatoes
  • 4 dollops fresh guacamole
Instructions
  1. In a small bowl, mix together guacamole and sour cream, set aside.
  2. In a medium bowl, combined corn, cucumber, pepper, olives (optional) and onion.
  3. In 4 shallow bowls or small plates layer ½ cup brown rice, ½ cup black beans, ¼ cup guacamole mixture and ¼ cup corn mixture.
  4. Top each with lettuce, cheese, tomato and a dollop of guacamole.
