Gluten-Free Cream Cheese Walnut Cookies

I’ve been watching reruns of Magnum PI on Netflix for the last couple weeks.  What a great show! Do you remember the days of no cell phones, pay phones and microfilm for archiving? It sometimes surreal on how much life has changed since the 80’s. The internet, everyone has a cell phone and you read books on ultra thin computers. These things do make life easier. If only Magnum had a cell phone, he wouldn’t have to drive across the island to warn Higgins. But… that would change the show. I also have this huge urge to go to Hawaii…Ok  at this point, any beach with sparkling blue waters and the sound of the waves crashing will do. It just looks so peaceful and relaxing. Sounds nice right about now.

Well this recipe isn’t paradise, but its close. The Cream Cheese Walnut Cookies are simply delish. Creamy, chewy and crunchy — all in one gluten-free cookie. I won’t lie, its hard to just eat one.. or two.

Gluten-Free Cream Cheese Walnut Cookies

Cream Cheese Walnut Cookies
Serves: about 2 dozen

  • ½ cup butter, softened
  • 4 ounces cream cheese, softened
  • 1 tablespoon milk
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • ¼ teaspoon xanthan gum
  • 1 ½ cup oat flour
  • ¾ cup chopped walnuts
  1. Preheat oven to 375°F and line baking sheets with parchment paper.
  2. In a mixing bowl, beat together butter, cream cheese and milk.
  3. Beat in sugar and vanilla. add egg
  4. Stir in xanthan gum.
  5. Gradually mix in flour.
  6. Stir in walnuts.
  7. Drop by tablespoonful 1-inches apart on to prepared baking sheets.
  8. Bake at 375°F for 8-10 minutes or until edges begin to slightly brown.
  9. Let cool for 2 minutes on baking sheet, then transfer to a cooling rack to cool completely.
  10. Store in an airtight container for a couple of days.
Freezer Friendly: Store in the freezer for up to 3 months.

    1. Hi Pat, I haven’t tried not using xanthan gum in these. I’m not sure how it would turn out. There are gluten-free flours available that already have xanthan gum or guar gum in them. (Bob’s Red Mill 1 and 1 Baking Flour or Cup4Cup) You can purchase xanthan gum at your local grocery store (I can get it at King Soopers or Safeway). I buy the Bob’s Red Mill brand.

    1. Hi Joy! Cream cheese cookies were a must have at Christmas time when I was growing up. So yummy! The flavor is unique, but cream cheese does add flavor. The texture is smooth and the walnuts add that crunch. I’m thinking I need to make some this weekend after talking about them! Let me know what you think. Have a great weekend!
