Ingredients
  • 2 ½ cups gluten-free all purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum (omit if flour already has)
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 4 tablespoons butter, softened, plus 4 teaspoons butter, melted
  • 2 tablespoons vegetable oil
  • 1 cup milk, warm
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon
  • ½ cup pecans, chopped
Instructions
  1. To make the dough: Combine all the dry ingredients in your mixer bowl.
  2. Add the soft butter, blending on low speed until you have coarse crumbs.
  3. Add the oil, milk, egg, and vanilla, beating until well combined. Scrape down the sides of the bowl.
  4. Beat on medium-high speed for 2 to 3 minutes; scrape the bowl down again.
  5. Cover the dough and let it rise for about 1 to 1 ½ hours, or until visibly puffy.
  6. Lightly grease a 9” pie plate or similar size baking dish.
  7. In a small bowl, combine the brown sugar, cinnamon, and pecans.
  8. In a separate small bowl, place melted butter.
  9. Roll dough into 1” ball. (You should have about 20.)
  10. Working one at a time, roll dough ball in the melted butter, then roll into cinnamon mixture and place on prepare plate or dish. Stack ball to form a dome.
  11. Sprinkle any leftover cinnamon mixture over dough balls and any leftover melted butter.
  12. Cover with plastic wrap and let the dough ball rise by half; about an hour.
  13. Preheat the oven to 350 degrees F.
  14. Unwrap the pie plate and place on baking sheet.
  15. Bake for 30 minutes, until the top is golden and firm. A toothpick or wooden skewer comes out clean when inserted in the center.
  16. Let bites cool in dish for about 15 minutes and drizzle with vanilla glaze.

Ingredients
  • 3 tablespoons soft cream cheese
  • ¾ cups confectioners' sugar
  • ⅛ cup soft butter
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
Instructions
  1. Mix together the cream cheese, sugar, butter, vanilla and milk with a stand mixer until smooth.
  2. Keep glaze at room temperature until ready to use.
  3. Give the glaze a quick stir before serving.
