Cheese and Refried Black Bean Pupusas

Pupusas

Pupusas are similar to corn tortillas, only about quarter inch thick and stuffed with a combination of cheeses, beans or meat. Traditionally served with curtido, a cabbage salad made with cabbage, onions, carrots and lime juice, and salsa. They can also be enjoyed with sour cream, guacamole or even plain. These are a little tricky to make, so be patient and try and keep the filling inside as best as possible. Besides the Cheese and Refried Black Bean Pupusas, there are endless variations with the pupusas. Try using chopped pork, chicken, chopped potatoes or finely jalapeño peppers.

Cheese and Refried Black Bean Pupusas

Ingredients
  • 2 cups Masa harina
  • 1 cup warm water
  • Filling — 1 cup
  • black refried beans
  • mozzarella cheese, shredded
  • queso fresco
  • minced green chile
Instructions
  1. In a large bowl, mix together using your hands the masa harina and water.
  2. Knead well, working in more water, one tablespoonful at a time, if needed. The dough will be moist and firm. A ball of the masa should not crack at the edges when you press down on it. Wrap the dough in plastic wrap and set aside to rest for 10 minutes.
  3. Roll the dough into a log on a clean and smooth surface. Cut it into 8 equal portions and roll each portion into a ball.
  4. Using your thumb, press an indentation in each ball.
  5. Scoop about 1 tablespoon of desired filling into each indentation.
  6. Fold the dough over to completely enclose it. Press the ball out with your palms to form a disc, be careful that that the filling doesn't spill out.
  7. Flat the discs out as flat as possible without having the filling spill out. (I used my hands. Try using a tortilla press or rolling pin.)
  8. In a large skillet over medium-high heat, grease well, cook each pupusa for about 2-7 minutes (depending on flatness). The bottom should be lightly browned and blistered.
  9. Flip and cook the other side for 2-7 minutes, until bottom is lightly brown and blistered.
  10. Remove from skillet and keep warm until ready to serve.
  11. Serve with salsa, curtido or sour cream.
