I miss good pasta. Gnocchi is one of my favorite (lasagna is the favorite!) and I was all to excited to see Cappello’s Gluten-Free Grain-Free Gnocchi. Fresh pasta — gluten-free, of course I had to try.
I found that Cappello’s did an excellent job on creating a gluten-free gnocchi. They are light and almost melt in your mouth. These little balls of goodness are made from organic potato flakes, water, almond flour, cage-free eggs, tapioca flour, potato starch and sea salt. I came across Cappello’s Gnocchi at Whole Foods in the frozen aisle, but you can also purchase online and are shipped in a re-usable eco-cooler. They sell three kinds fresh pastas — gnocchi, lasagna and fettuccine, along with chocolate chip cookie dough. I can’t wait to make lasagna using their fresh pasta sheets…I can’t remember the last time I had lasagna. I’m getting hungry just thinking about it.
I’ve only tried the gnocchi with red sauce, but I can’t wait to explore using other sauces. I definitely recommend their gluten-free grain-free gnocchi to the pasta and non-pasta lover. You won’t be disappointed.
